Easy Vegan Recipes

There are many easy vegan recipes on the internet although if you are like me, many of the ones I have tried are not really written that well or they just don’t turn out right.

Maintaining a vegan diet can be a routine in boredom by eating the same dishes over and over until you are ready to scream. I have been there and have taken steps to keep a fresh and exciting vegan lifestyle by collecting many easy vegan recipes to add to my meal rotations, and your in luck because I am going to share some with you.

Not only did I choose vegan recipes that were easy to prepare, but also tasted great and were nutritious. I hope you will get some inspiration from this article on adding new vegan recipes to your mix.

The first easy vegan recipes I will share is a fruit recipe.

Frozen Fruit Delight

2 ripe bananas

juice of one medium lemon

1/2 cup of unsweetened apple juice chilled

2/3 cup of unsweetened frozen strawberries or unthawed raspberries

Slice the bananas and mix them with the lemon juice. Arrange in a single layer on a baking sheet, and freeze until they are firm (30 minutes or more). In a food processor add the frozen bananas, strawberries and cold juice and process until smooth. Serve immediately, or spoon into serving dishes, wine glasses or parfait glasses and freeze up to 1 hour.

This is a great recipe on a hot day.

The next easy vegan recipe is a simple filling dish.

Pepper and Salt Tofu

1 block of firm tofu

white pepper

salt

2 tbs corn flour

2 tbs plain flour

olive oil

Drain the tofu before cutting it into large cubes.

Mix both flour’s together in a container.

On a separate plate sprinkle the pepper and salt together making sure it is mixed well.

Rub the salt and pepper into the tofu cubes softly

Place the tofu cubes into the flour and cover them on all sides.

Heat some olive oil in a pan and add the tofu once the oil is hot.

Shallow fry all sides until golden brown.

Drain on a paper towel and serve hot.

This is a great recipe, although make sure you eat it as soon as it’s ready, if it sets for a while the batter on the outside softens.

Barbecued Spicy Corn

3 pieces of fresh corn, with hull removed and cleaned

pinch of salt

1 tsp onion powder

1/2 tsp of white pepper

1/2 tsp of cayenne pepper

1 tsp garlic minced

1 tsp of paprika

1/2 tsp ginger minced

1/2 tsp of chili paste

2 tbs light butter or margarine

1/2 tsp coriander

1/2 tsp parsley flakes

Mix all herbs and spices together into a ziplock bag

add the butter or margarine to your spices

Place each ear of corn on a piece of foil and rub some of the butter mix all over the corn. (I like to use my hands)

Repeat procedure with all of the corn, leaving a little butter mixture for after the corn is cooked.

Wrap the foil up and cook on the grill until the corn is soft.

Remove the foil and place a little more of the butter mixture on the corn before eating.

Veggie Stir Fry

1 onion chopped

1 clove of garlic peeled and crushed

Your favorite veggies such as carrots, mushrooms, broccoli, beans, corn, tofu, bamboo shoots, bell peppers, beansprouts, etc..

1/2 pint (200ml) vegetable stock.

Tomato puree

Soy Sauce

Sunflower seeds or pine nuts

Fry onion and garlic for 3-4 minutes in a little olive oil, Add your veggies starting with the firmest (ie. carrots) add your softer veggies last (ie. mushrooms.)

Add generous amounts of soy sauce and fry the veggies for a couple of minutes after they are all added.

Pour in the vegetable stock and add 1 tablespoon of tomato puree.

Add salt and pepper to taste, and then serve on a bed of rice or noodles, whichever you prefer.

I hope I have given you some new ideas to add to your menu mix, and also some inspiration to seek out some more easy vegan recipes to add to the mix.

Eating and maintaining a vegan lifestyle doesn’t have to be boring, cooking vegetarian meals can be fun and exciting, you make it what you want it to be. My suggestions is to plan menus a week in advance and then shop for the ingredients you will need for that week of meals. Getting into this habit will take the frustration of trying daily to think of something to fix, especially after coming home from a long day of work.
